What to cook with it

Truffle aroma or real truffle?

They are not the same thing. 2,4-dithiapentane, one of the known compounds in truffle aroma, occurs in natural truffles and is also made synthetically; in many commercial "truffle" products this is where the smell comes from.

A study in Food Control reports that truffle-flavoured oils rarely contain real truffle or natural truffle aroma. So "flavoured" doesn't mean there is truffle inside; the way to be sure is to read the label.

This product is sold as "truffle flavoured"; the aroma source and ingredients are on the label.

Frequently asked questions

Is there real truffle in this olive oil?

The product is described as "truffle flavoured". The aroma source and ingredients are on the label; "flavoured" on its own doesn't mean there are pieces of truffle in the bottle.

When do you add truffle olive oil to a dish?

After cooking, right before serving. A few drops on the hot plate are enough; if you heat it in the pan, the aroma disappears.

Can I fry with it?

We wouldn't. It's a finishing oil. Cook with plain olive oil and add the truffle flavoured oil at the very end.

How much should I use?

Start with a few drops per serving. The aroma is strong, and too much hides the taste of the food itself.

How long does it keep once opened?

We suggest using it within three months. Keep it capped somewhere cool and dark. The best-before date is on the pack.

Why a dark bottle?

Light and heat spoil the taste of olive oil over time, and dark glass lets in less light. Photos are illustrative and packaging may vary by batch.
