The hedgehog mushroom (Hydnum repandum) has spines instead of gills under its cap; it tastes sweet and nutty with a meaty texture. It turns bitter with age, so pick young, firm ones and cook them well. This recipe is adapted from the scalloped hedgehogs in the Mycological Society of San Francisco cookbook, with smoked beef instead of bacon.
Never eat a mushroom you haven't identified with certainty: the underside of a hedgehog mushroom has short spines, not gills or pores. A look-alike without spines is not this species.

Heat the oven to 190 °C (375 °F). Clean the hedgehogs with a brush and a little water, keeping the spiny underside as dry as you can; pat dry. Discard any old, bitter ones.
