Oyster mushroom kavurma with peppers, made with oyster mushroom (Pleurotus ostreatus)

Torn into strips and fried hard, oyster mushrooms take on a fibrous, meaty texture, which is why they are a popular meat-free kavurma.

Wrap it in flatbread, serve it with pilaf, or crack an egg over it for breakfast.
