How do you roast potatoes and mushrooms together? Parboil chunky potatoes for 8 minutes, toss them with the mushrooms in melted butter, garlic and seasoning, roast at 200 °C for 25 minutes, then add the cheese for another 5–7 minutes. Parboiling means the potatoes cook through in the same time as the mushrooms.
It's a filling vegetarian main on its own and works as a side for meat or chicken.

Mushroom swaps
Chestnut / cremini mushroom Agaricus bisporusReleases less water and has a stronger flavour.
Oyster mushroom Pleurotus ostreatusTear into strips by hand; it cooks quickly.
Tips
- Shake the drained potatoes in the colander to rough up the edges; they'll crisp better in the oven.
- Don't crowd the dish; overlapping potatoes steam instead of browning.
- Instead of cheese, serve with a bowl of garlic yoghurt on the side.
Storage
Keeps in an airtight container in the fridge for 2–3 days. Reheat at 180 °C for 10 minutes so the cheese melts again and the potatoes don't dry out.
Frequently asked questions
How long do potatoes and mushrooms take to roast?
With parboiled potatoes, about 30–32 minutes at 200 °C in total: 25 minutes with the mushrooms and 5–7 with the cheese.
Do I need to parboil the potatoes?
It isn't essential but it helps. Parboiling for 8 minutes lets the potatoes cook through with the mushrooms; if you skip it, add 15 minutes and put the mushrooms in later.
Can I make it in a frying pan?
Yes. Fry the parboiled potatoes, add mushrooms browned separately, scatter over the cheese and cover until melted.
Which cheese works best?
A mix of kashar and cheddar melts well and browns nicely. Mozzarella is milder and parmesan sharper.
Is it filling enough as a vegetarian main?
Yes. Potatoes and cheese make it hearty; add yoghurt and a salad for a complete vegetarian meal.
What do you serve with it?
Garlic yoghurt, a green salad or cacık. As a side it goes well with grilled meat and chicken.
Is there a stovetop version?
Yes: our Turkish mushroom and potato stew simmers the potatoes with peppers and tomato paste and adds browned mushrooms at the end.
