According to Wikipedia, the trooping funnel (Infundibulicybe geotropa) is popular in northern Italy, where it is roasted, cooked in stews and frittatas, or preserved in oil. Only young mushrooms are recommended; older ones lose their flavour and turn tough, and their stems are usually discarded. This recipe is adapted from GialloZafferano's mushroom frittata.
Safety: small white to cream funnels containing muscarine, the similarly coloured poisonous Entoloma sinuatum, and the clouded funnel (Clitocybe nebularis), which can cause reactions with alcohol, all grow in similar places. Don't cook this mushroom until its large size, long thick stem, central bump and white spore print have all been confirmed; never eat a mushroom you haven't identified with certainty.

-
Use only young mushrooms. Remove the tough stems, wipe the caps with a damp cloth and slice thinly; finely chop the garlic.
~8 min -
Heat 2 teaspoons of the oil with the garlic in a non-stick pan, add the mushrooms and cook over medium heat for about 8 minutes, until their liquid has evaporated.
~8 min -
Stir in salt and parsley, turn off the heat and let cool slightly. Meanwhile whisk the eggs well with a pinch of salt.
~4 min -
Turn the heat back on and add the rest of the oil; when the pan is hot, pour the eggs over the mushrooms. Wait a few minutes, then cover with a lid.
~3 min -
Lower the heat and cook covered for 8 more minutes; no need to flip. Slide onto a plate, sprinkle with parsley and serve.
~8 min
Enjoy!
